INSTRUCTIONS

  1. Shred the cabbage finely and chop the green onions.
  2. In a large mixing bowl, whisk together the eggs, apple cider vinegar (or coconut vinegar), and salt until well combined.
  3. Add the shredded cabbage and chopped green onions to the wet ingredients. Mix well to coat the cabbage evenly.
  4. In a separate bowl, combine coconut flour (or cassava flour) and baking soda. Gradually add this dry mixture to the wet ingredients, stirring continuously to avoid lumps.
  5. The batter should be thick but spreadable. If needed, add a little more flour or water to achieve the desired consistency.
  6. Add the black pepper substitute (if not following strict AIP) and mix well.
  7. Preheat your oven to 350°F (175°C).
  8. Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the cabbage batter, spreading it evenly.
  9. Cook on the stovetop for 5-7 minutes or until the edges start to set.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the top is golden brown and the center is set.
