INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with coconut oil.
  2. In a large bowl, whisk together coconut flour, baking soda,  baking powder, salt,  turmeric, and cardamom.
  3. In a separate bowl, combine melted  coconut oil, raw honey, non-dairy milk, apple cider vinegar, maple syrup, vanilla extract, and well-beaten gelatin eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Gently fold in chopped walnuts, chia seeds, fresh or frozen raspberries, and fresh or frozen blueberries.
  6. Spoon the batter into the greased muffin tin, filling each cup almost to the top.
  7. Sprinkle rolled coconut flakes on top of each muffin, pressing them slightly into the batter.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
